The Art School Restaurant Liverpool

The Art School Restaurant Liverpool Renowned Chef Paul Askew opened The Art School Restaurant in September 2014.
(2150)

The Art School Restaurant is located in the stunning lantern room of the Victorian 1888 ‘Home for Destitute children’ building on Sugnall Street and is merely a stones throw away from Hope Street and Liverpool city centre. This area is one of the richest areas of the city in terms of culture and arts; Both the Liverpool and Metropolitan Cathedrals are located only a couple of minutes walk away and

John Moore’s University is also very nearby. The Liverpool Philharmonic is located literally across the road from The Art School. This location is superbly placed for an uber-elegant, fine dine restaurant and bar, the very first of its kind in Liverpool city centre. This is a true labour of love from Paul Askew, Director Chef of Hope Street Hotel and The London Carriage Works Restaurant. Paul opens The Art School Restaurant as a high end, 50 cover fine dine restaurant and bar by Spring 2014, and by using only the finest produce and ingredients perfectly accompanied by some very fine individuals indeed, he will be reaching for the stars with the finest that Liverpool has to offer..

Chef Patron Paul Askew on ‘Strawberry Fields’:

‘At this time of year it’s all about the produce, and for me nothing beats English strawberries. We’re spoilt, with Claremont Farm on the Wirral, and there the wonderful market growers over in Hooton, Formby and Crosby.

The dish is simple in spirit and generous in ex*****on: a Joconde sponge, a delicate mascarpone mousse, and a strawberry consommé poured at the base. Basil, citrus, a little mint, then plenty of beautiful strawberries on top with a glaze and a touch of edible gold.

It’s been on our menu for a few years now, developed by Jahnitra and the pastry team, inspired by my love of strawberries in season, and of course a nod to the Beatles and our Liverpool heritage.

It keeps evolving, and I think it’s become a truly wonderful dish. We served it recently at the Commanderie de Bordeaux lunch here in Liverpool, paired with a Sauternes that was off the scale.

Plenty more Strawberry Fields to come, I hope.’

Chef Patron Paul Askew on the summer Prix Fixe lamb:

‘We’re cooking with Cumbrian Herdwick, which for me is one of the finest lamb you can put on a plate in the summer. We honour the whole animal: the rump is roasted over hay, giving it a gentle, smoky sweetness, while the shoulder is marinated in harissa and slow-cooked for five hours until it’s meltingly tender. The natural jus is drawn from the shoulder itself, so nothing is lost.

Around it we build something bright and full of summer, a ‘Tabouleh’ of cracked wheat, summer greens, a carrot slow-cooked in lamb fat, silky aubergine purée and a herb-scented citrus feta, with that natural jus bringing everything together. There’s a little Mediterranean warmth in there: mint, feta, and the sweetness of the lamb at its peak.

Lamb has a long and proud tradition here at The Art School. It was a lamb dish (‘Memories with Marjorie’) that earned a perfect 10 when I cooked on Great British Menu, and it remains one of the proudest moments of my career. This summer’s dish carries that same love of the ingredient.

Certainly one not to miss.’
