We had a wonderful student from Saint Marys Limavady with us last week for his work experience — Justine, and he truly shone from the moment he walked through the door!
By the end of his five days, I was so impressed that I offered him a job 👏 👏
I’ve always believed that if a young person is genuinely interested in hospitality, they deserve to be taught properly — not just handed a drying cloth, sent to the sink and forgotten about!!
So Justine got the full experience:
• Real kitchen skills
• Food prep — grating cheese, making stuffing, helping with daily tasks
• Baking cupcakes with me using our yellow birds recipe 👌 and of course taste testing!
• Learning food safety, colour coding, stock rotation, and good food‑handling practices
• Gaining confidence with equipment and understanding how a busy kitchen works
Justine showed maturity, kindness, curiosity, and a real willingness to learn.
He should be incredibly proud of himself — I know we are!
