The name Nanakanba — “Seven-Crown Horse” — pays tribute to the legendary Japanese racehorse Symboli Rudolf, famously known as “The Emperor.”

With its huge mouth and a tiny “𝗹𝗶𝗴𝗵𝘁” 🔅above its head, the monkfish may look unusual—but hidden inside is one of Japan’s most treasured seasonal delicacies.

Its liver can make up nearly one-third of its body, but 𝒑𝒓𝒆𝒑𝒂𝒓𝒊𝒏𝒈 𝒂𝒏𝒌𝒊𝒎𝒐 𝒕𝒂𝒌𝒆𝒔 𝒕𝒊𝒎𝒆, 𝒑𝒂𝒕𝒊𝒆𝒏𝒄𝒆 𝒂𝒏𝒅 𝒔𝒌𝒊𝒍𝒍. Every vein and membrane is carefully removed before the liver is seasoned, shaped and steamed.

It was a real pleasure to meet and get to know 𝗖𝗵𝗲𝗳 𝗠𝗶𝗰𝗵𝗮𝗲𝗹 𝗢’𝗛𝗮𝗿𝗲 — not only as an incredible chef, but as a new friend. 👨‍🍳🤝

𝗠𝗶𝗰𝗵𝗮𝗲𝗹 is one of the UK’s most recognised chefs, known for his creative and unconventional approach to cooking, and for putting Leeds on the culinary map through his Michelin-starred restaurant.

As a chef myself, moments like this mean a lot.

Food is so much more than what we put on a plate. Every country has its own ingredients, techniques, traditions and culture — and there is always something we can learn from one another.

I’m really happy that 𝗠𝗶𝗰𝗵𝗮𝗲𝗹 enjoyed what we do at HIKARI, and especially our approach to Japanese food and culture.
