SPAGHETTI CHITARRA

You only have one more week left of this absolute banger of a dish, inspired by the region of Abruzzo.

Abruzzo is one of those lesser known regions of Italy. Probably most famous for Montepulciano D’Abruzzo wine.

It’s a unique and special region, where you could be on the beach in your budgie smugglers in the morning, then drive an hour inland and be heading up a snow capped mountain for the afternoon.

The cuisine of Abruzzo really reflects this special & diverse landscape. My first experience of eating not only raw, but alive seafood was on the beaches of Pescara. And some of my favourite pecorino (sheep’s cheese) have come from the mountainous parts of the region.

Spaghetti chitarra is a typical type of spaghetti from Abruzzo. Made by cutting the pasta dough with a ‘chitarra’ - a guitar, so called for its appearance. The result is a rustic, squared spaghetti, that loves a rich sauce, and is very often enjoyed with mussels, as it is here.

Hello.

Here’s ‘ar George making his favourite cocktail on the menu - the Beericano.

Yeah an Americano is good. It’s refreshing. But what’s more refreshing than soda water? It’s beer, obviously.

This has been on the menu for about 6 months now and it probably won’t be leaving any time soon, because it’s fu***ng delicious.

We may not have the outside seating to be able to sit outside in this glorious weather. But we do have very good air conditioning. And plenty of summery refreshments and mouthbangs on the menu.

So if you’re a sun dodger rather than a sun seeker, or you’re looking for a respite from having been out in the sun too long, come and have some summery Stuzzi stuff with us.

Stuzzi-made radiatore pasta, tossed with a ‘primavera’ of English asparagus, broad beans, peas, radish & confit white onion. Finished with a caper pangrattato.

In the bottle, we have Paltrinieri Radice Lambrusco Sorbara. Made from 100% Lambrusco Sorbara grapes, their thinner skins produce a lighter style of Lambrusco. This is dry, citrusy and sherberty, and vibrant with summer fruits.

SUNSHINE!

Who knows how long it’ll stick around for. But we’ll rejoice in its arrival whilst we have it.

Here’s some sunshine in a bowl that would taste delicious consumed with some sunshine in a bottle.

We have a Stuzzi take on a Panzanella - a traditional salad from Tuscany. Ours is using asparagus from , Isle Of Wight tomatoes & Nocellara olives from Sicily.

In the bottle we have a delicious Rosato Pet Nat from Puglia, made by out of Nero Di T***a. It’s dry, fresh and bursting with ripe red fruits and acidity. Perfect if the sun sticks around. And if it decides to f**k off again, just close your eyes and manifest.

Gnudi comes from the tradition of cucina poverna (kitchen of the poor, or peasant cooking) where nothing goes to waste.

In this instance, left over ricotta ravioli filling would be mixed with flour and blanched in boiling water rather than thrown away, thus giving this Tuscan delight its name - meaning naked in Italian, in reference to these dumplings being without their pasta wrapping.

Our gnudi are dusted slightly in semolina and deep fried, another traditional way of serving them.

Deep fried ricotta gnudi, served with cavolo nero & walnuts.
