A few shots from the last few days prepping for reopening tomorrow. Exactly a year to the day since I left, started my own business, worked in some amazing kitchens with fantastic people, I am returning with a menu and team I'm super proud of! We can't wait to deliver this bad boy. Fresh, seasonal, local where possible (getting harder to fulfil that one) and full of flavour!!!

A cracking job this evening for and some amazing folks! Imagine getting 25 people together in a massive house in then booking a to feed you all. That's just what they did and it was a pleasure from start to finish. Wonderful people, fantastic location and facilities and great produce. What more could you want? (Apart from a cheeky afternoon visit to apparently πŸ˜‚πŸ»πŸ₯΄)

A cheeky little sharing board with a banging and garnish from yesterday at
My last weekend there before I head back to on the 1st of June to take the reins again.
I've enjoyed every second at this fantastic hotel and restaurant, met some truly lovely people and look forward to our paths crossing again in the future.
Only a double BBQ function today and Sunday lunch tomorrow to go, fingers crossed for the weather

A cheeky little I put together this weekend at for a cracking wedding. (Cheese supplies by )Along with my functions I've also had the privilege to freelance at some amazing pubs and restaurants recently. This is one of them. Definitely give them a try if you're in and want some delicious food in beautiful surroundings! Such a lovely bunch, always a pleasure to return there.

Taking some time out today and feeling hellish (not covid, just a cold that hit me like a steam train) but still being productive and going through my over the last few years. It's amazing what you create and dishes you forget about! I've been so lucky to work with some amazing people in some incredible places, alongside running my own enterprise. These are some of the images I'm looking at for my new website (watch this space) which will be a fully-interactive and deliciously colourful affair. I've got some great projects and partnerships coming up so stay tuned. Feel free to share away if you or your friends want any catering.

Preparation for a event this evening. Keeping it hearty with and as it's miserable out there... Get in touch if you have an event coming up. Catering for all styles of dining, I'll work with you to create a menu perfect for you and your guests

Amuse bouche:
Chorizo and manchego popcorn
Manchego and truffle popcorn
Starters:
Fish - Sussex haddock smokie croquettes, caramelised spring onions, tartare sauce, sourdough croutes
Vegetarian:
Sussex charmer croquettes, caramelised spring onions, marmite emulsion, sourdough croutes

Mains:
Meat - red wine braised shortrib, truffle mash, confit shallots, sauteed greens, parmesan crisp, jus
Vegetarian - tandoori hispi cabbage, mint, cucumber and coriander sauce, spiced roasted cashew crumb, tenderstem pakora

Dessert:
Either - white chocolate panacotta, freeze-dried raspberries, vanilla and pistachio tuile
Or - sticky toffee pudding, muscovado caramel sauce, vanilla ice cream, hazelnut crumb

Petit fours - salted caramel chocolate truffles
