This Friday, 2 October, we're turning The Cheese Yard Knutsford into a little corner of the Alps.
Picture it: a bubbling pot of melted cheese in the middle of the table, crusty bread for dipping, and good company around it. Our house fondue is made the proper way, rich, silky and stretchy. It's the perfect way to start your weekend.

Something worth a detour into Knutsford this week.

This is Ubriaco Pinot Rosé from the Veneto. Ubriaco means drunken, and the name is literal — the wheels spend their ageing buried in grape pomace, the skins and pips and stalks left behind after pressing Pinot Rosé. The skins stain the rind that pink colour and push their flavour into the cheese itself.

The tradition is said to go back to the First World War, when farmers in the region hid their cheese in the pomace to stop it being taken by soldiers passing through, and found the cheese came out the better for it. Whether that's the whole truth or a good story told often enough, it's how they've made it ever since.

It tastes firm and crystalline, sweet and fruity, with a faint grip of tannin at the edge that you don't get from any ordinary hard cheese. Put a glass of something Italian next to it and the pairing almost makes itself.
