09 · Île-de-France — the finish

The Tour finishes in Paris tomorrow. We're finishing our journey where the race ends — with a great cheese of the Île-de-France.

To crown the table:

🧀 **Pave de Paris** — In Paris, the pavé — the humble cobblestone — is bound up with the city's history: long a symbol of revolution, and today of a quieter, agroecological one. This soft farmhouse cheese carries that spirit. Made on the farm from whole cow's and goat's milk by traditional methods, it wears an ashed crust over a dense, sunshine-yellow paste marbled with white. Supple and delicate, it's frank and mineral at the rind, giving way to soft, fruity notes at its heart. At its best around two months — though the patient will happily let it go further.

Three weeks, one beautiful country, more than 15 cheeses. Merci for riding along with us — now come and taste the finish line.

Some cheeses you sell. Some you find yourself talking about long after the customer has left.
Bleu d'Auvergne is one of those.
It comes from the volcanic hills of central France, where the pastures are green in a way that only ancient lava seems to manage. The story goes that a young cheesemaker, Antoine Roussel, noticed the blue mould growing on his rye bread and wondered what would happen if he invited it into his curd. Then he pierced the cheese with a needle to let the air in — and blue cheese in France was never quite the same.
What I love about it: it's gentler than you expect. Creamy rather than sharp, buttery, with that soft mineral tang at the finish. If Roquefort has ever been a little too bold for you, this is the one.
Try it with a spoonful of honey, a few toasted walnuts, or a glass of something red from the Rhône.
