Halibut with charred confit fennel, cavolo nero, melitzanosalata and dill oil.

Pork chop with white pudding, carob, parmesan crumble and a charred riddichio, fennel salad with blistered red grapes and dill and garlic emulsion.

Seasonal salad with blue cheese whip, charred pear, walnuts, leaves, parmesan, pickled shallots, fresh parsley, fresh dill, wine vinegar and lemon oil.
