The first Towy Sewin of the Season......

An amazing privilege to get a beautiful Towy Sewin and we are almost as excited as Alex was to have these photos

We are going to a citrus gin cure for one half of the sewin to put on our Sunday specials

The other half we are going to slightly dry age and serve with a warm nicoise salad, a throwback to a dish once served in the Diablos cocktail bar on a French themed evening
