🔥 NEW KITCHEN TAKEOVER AT THE WOLSEY 🔥

We’re very excited to introduce Bark & Ember — taking over the kitchen at The Thomas Wolsey from Saturday 26th September.

REAL SMOKE. REAL BARK. REAL TEXAS. 🇺🇸🔥

Behind Bark & Ember are father-and-son chefs John & John Saward, two highly experienced chefs with a shared obsession for proper Texas BBQ and slow-smoked meats.

REAL TEXAS BBQ. NO SHORTCUTS.

The smoker is fired up in the early hours, fuelled with oak wood chip. Brisket, ribs, sausages and more are cooked low and slow, giving the smoke and time a chance to do what they do best.
