Its white flesh is firm and its flavour is delicate; our Chef Larisa loves to prepare it filleted and pan fried in butter and lemon - capers sauce, accompanied by seasonal roasted veg and crispy new potatoes 😋.

📌According to our fishmonger, this is the best time of the year for these, before they start breeding over winter.
