🍪✨ Why I started making my own biscuits… ✨🍪

I started making more of our snacks at home because, honestly, I just feel better knowing exactly what I’m giving my family. ❤️

I used to pick up biscuits and snacks from the supermarket because they’re quick and convenient, but when I started looking properly at the ingredients, I realised there were so many things I didn’t really need.

So now, whenever I can, I make them myself. It doesn’t have to be complicated — these little biscuits are so quick and easy to make, and everyone loves them! 🥰

Today I only had white chocolate in the cupboard, so I added a little cocoa powder to the dough instead. 🍫🤎 Sometimes the best recipes come from simply using what you already have!

💡 My little tip: put the dough into a piping bag and pipe small portions straight onto the baking tray. It makes forming the biscuits SO much quicker! You can also use a small teaspoon. If the dough feels too soft, pop it into the fridge for a little while first. ❄️

🛒 Ingredients:
250g butter, softened
100g brown sugar
100g caster sugar
100g eggs (about 2 medium eggs)
360g plain flour
5g vanilla extract
12g cornflour
3g bicarbonate of soda
3g salt
160g chopped chocolate
✨ A little cocoa powder, to taste

🥣 Method:
Cream the butter and sugars until light and fluffy. Add the eggs and vanilla and mix well. Sift in the dry ingredients and combine. Stir in the chocolate.

Pipe or spoon small portions onto lined baking trays, flatten slightly and bake at 180°C (160°C fan) for around 10–12 minutes, until lightly golden around the edges. 🍪

✨ This recipe makes 4 full trays of mini biscuits!

“FIT MAYO “

Keep an eye on ingredients and strictly count your calories? This recipe is made for you!
Traditional mayonnaise can wreck your daily calorie intake in seconds. On top of that, shop-bought "light" versions are often packed with artificial additives, preservatives, and cheap, low-quality oils.
I’ve made a homemade, high-protein alternative using boiled eggs, which is absolutely perfect for tuna mayo, salads, or hard-boiled eggs! 🥚👇

Ingredients:
-Hard-boiled eggs (always check where your food comes from – I get mine directly from a local farm! They're top quality and work out cheaper than organic ones in the supermarket)
- Plain natural yoghurt (or 0% Greek yoghurt)
-Mustard
-Rice vinegar
-Salt and black pepper to taste

Top tip for the right consistency:
The yoghurt and rice vinegar act as the liquid base – add them gradually while blending so it doesn't end up too runny!

Method:
Pop all the ingredients into a blender, blitz until smooth, and you’re good to go!

Happy Friday! No deep fry needed. 😉

Today’s school lunch was a little different from the usual Friday fish & chips. ❤️

I packed a warm thermos with salmon and linguine tossed with olive oil, garlic and parsley. Then I added some cucumber and cherry tomatoes, sliced apple, corn crisps, a little yoghurt and a homemade pumpkin & chocolate muffin. 🎃🧁

Simple food, nothing fancy and nothing expensive — just a lunch made with care.

I really believe that what we give our children to eat today can help shape the choices they make tomorrow. When we show them that healthy food can be tasty, colourful and enjoyable, we’re helping them build good habits for life. ❤️

It doesn’t have to be perfect, and it certainly doesn’t have to cost a fortune. Sometimes it’s just about making the best choice with what we already have at home.

And yes… it’s Friday! But it doesn’t always have to mean fish & chips. 😉🐟🍟

Surprise your friends and family with the ultimate autumn treat! 🎃🍂 I made these stunning, buttery pumpkin brioche breads shaped like real pumpkins, and everyone was absolutely amazed!Instead of artificial toppings, I used nature’s finest – cinnamon sticks for the stems and fresh bay leaves for the foliage 🍃. The whole house smells incredible!

Ingredients:

•570g white flour

•150g pumpkin purée + 150g warm milk

•100g butter (melted)

•100g caster sugar + 2 tsp vanilla sugar

•25g fresh yeast (OR 1 sachet / 7-8g of fast-action dried yeast)

•1/2 tsp salt + 1 1/2 tsp ground cinnamon

•To decorate: 1 egg (beaten), cinnamon sticks, fresh bay

1-The Dough: Mix warm milk, yeast, a tbsp of sugar and flour to make a quick starter (leave for 10 mins). Add the rest of the ingredients and knead for about 10 mins until smooth.

2- The Pumpkin Trick 🪄: Divide the dough into 2 balls. Lay 4 pieces of kitchen twine on the counter crossing in the middle like a star. Place the dough ball in the centre and tie the strings loosely at the top to divide it into 8 sections. Don't tie too tight – the dough needs room to expand!

3-Baking & Rising: Place on a baking tray and brush with beaten egg.
💡 TOP TIP: If you are using dried yeast, you need to let the dough rise for longer! Leave it in a warm place for about 30-40 minutes before putting it in the oven.
If using fresh yeast, put it straight into a COLD oven, set to 50°C for 15 mins to rise, then turn up to 180°C and bake for 20-25 mins.

4-The Finish: Gently snip and remove the strings. Pop a cinnamon stick and a fresh bay leaf into the top!

A little reminder that vegetables can belong in dessert too 🤎🧁

Beetroot season is here, so naturally… I had to make chocolate beetroot muffins. 🍫❤️
They’re soft, rich, chocolatey and honestly the perfect addition to a homemade lunchbox.

I’m all about cooking at home, homemade treats, seasonal ingredients and being a little more mindful about what goes into my food. 🌱

Recipe ↓

150 g cooked beetroot
3 large eggs
175 g light muscovado sugar
175 g plain flour
50 g cocoa powder
1¾ tsp baking powder
¾ tsp baking soda
100 g natural yogurt
100 g chocolate chips
100 g chopped milk chocolate
1 tbsp vanilla extract

Blend the beetroot, then mix with eggs, sugar, yogurt and vanilla. Add the dry ingredients and gently mix. Fold in the chocolate.
Bake at 180°C / 350°F for 20min.

🍔 This week: homemade beef burgers done properly

I’ve just dropped a new video showing exactly how I make mine from scratch — no fillers, no flavour enhancers, no gluten… just real beef and simple ingredients. That’s why they’re not only tastier, but a healthier option too.

I get my meat from a local butcher, portion it up and freeze it, so there’s always something decent ready when you fancy a proper burger.

I’ll show you how little actually goes into them 👀One key ingredient I always add? A splash of Worcestershire sauce — gives it that rich, proper flavour.
