BAKER & CHEF REQUIRED

£13.50 per hour | 25–30 hours per week

We’re looking for a passionate and reliable Baker & Chef to join our growing team.

This is a hands-on role working across both Fico and our dedicated prep kitchen, located just a short distance away.

The role will include, but isn’t limited to:

• Making and managing dough from start to finish
• Dividing, shaping and proving dough
• Baking our breads
• Preparing, baking and finishing Pizza al Taglio
• Assisting with the development and production of our growing pastry and sweet offer
• General food preparation and kitchen duties
• Preparing and serving our Aperitivo offer
• Slicing cured meats using an electric slicer
• Slicing and serving a variety of Italian cheeses
• Maintaining excellent standards of cleanliness, organisation and food hygiene
• Working independently as well as alongside the wider Fico team
• Helping us maintain consistency and quality as our food offer continues to develop

Most shifts will start at approximately 6:30am, so reliability and being comfortable with early starts are essential.

The position will normally be 25–30 hours per week, although some flexibility around shifts will be required.

We’re looking for somebody who:

• Has a genuine interest in baking, bread, pizza and food
• Has a genuine passion for Italian food and culture, and particularly the concept of Aperitivo
• Has broad knowledge of Italian food and its methods of preparation
• Takes pride in producing food to a consistently high standard
• Is organised, clean and able to manage their own workload
• Is reliable and comfortable working independently
• Has a flexible attitude and is happy to get stuck in wherever needed
• Enjoys learning and developing new products and ideas

Previous professional kitchen or bakery experience would be a strong advantage, although attitude, reliability and a genuine passion for the role are equally important.

We have been listening and we’re ready to open our doors from 9am from Thursday through to Sunday each week!

We will be offering a range of croissants, yogurts, overnight oats and these absolutely outrageous cannoli!

A moment for our house bread please!

Bulk fermented for at least 48 hours to give it a complex flavour and baked fresh every morning, it contains nothing more than Caputo 00 flour, water, yeast and salt.

Paired with Partanna EVOO from Sicily & balsamic vinegar OR our house anchovy butter - containing unsalted butter, anchovies, lemon zest and juice, chilli, chives, and parsley (plus a few secret ingredients) - it’s easy to see why it’s one of our most popular items on the menu!

We’ve been pulling together a breakfast offer and will be back on Thursday, from the earlier time of 9am…

Our table in the cell is the perfect place to spend a Sunday afternoon, drinking the best w**e and eating amazing food.

It’s what Sundays were made for 💯

If you look closely you can still see the carvings in the ceiling from those locked in the cell in the early 18th century!

Co-owner and Head Chef Paul Cataldo couldn’t be more proud of his little baby Prosciutto di Parma!

We haven’t seen him this happy since Brass Monkey B**r Boutique started stocking Chin Chin
