Viña Barredero Blanco 2025 is made from Zalema, a rare grape you'll rarely find outside this corner of Spain, grown organically near the wild Atlantic coast of Huelva.

There is a new bottle behind the bar, and it smells like peaches and fresh bread.

Diatomists' Fino, from El Puerto de Santa María, made on albariza soil that gives it real depth and a long, saline finish. It is fuller and more generous than most finos, and it is exactly the sort of thing worth slowing down for.

Chilled glass, a little jamón, good conversation. That is the plan.

Cecina de León has been made the same way for generations in Castilla y León, air cured, IGP protected, nothing added that shouldn't be there.

Watch Chusé prepare an authentic salmorejo from scratch. This typical cold soup from Córdoba is the ultimate lazy summer dish. We keep it simple with ripe plum tomatoes, garlic, Maldon salt, a generous pour of extra virgin olive oil, a pinch of sherry vinegar, and leftover bread from our neighbours at St John Bakery. To finish, we add chopped boiled egg, our signature jamón ibérico, and a final drizzle of olive oil.

Fresh off the truck from Somontano.
Our wine of the week is the Bestué Chardonnay 2025, grown on a single 9 hectare finca in the hills above Enate, at the foot of the Spanish Pyrénées. This year's harvest was small and concentrated thanks to a dry summer, which means more character in the glass: pineapple, mango, lime, and a crisp, vibrant finish that goes down far too easily.
Served chilled, it's the kind of white you order for one glass and end up finishing the bottle.

Introducing our Wine of the Week: Coto de Hayas Garnacha Blanca, a Spanish white with serious body and character. Aged in French oak barrels for five to six months, this beautiful pour is rich, creamy, and structured, carrying fresh notes of green apple, citrus, and a subtle touch of spice.

We are pairing this elegant white with our ultimate comfort food: warm, bubbling Tetilla con Sobrasada y Miel (creamy Galician cheese, spiced pork sausage, and a drizzle of honey). The wine's vibrant minerality and structural depth cut through the rich, savoury cheese and sweet honey for a flawless, satisfying balance of flavours.
