Who doesn’t love a Negroni! For over a century, this 3-ingredient icon has been enjoyed in thousands of variations.
The Negroni was created upon a request by an Italian nobleman, Count Camillo Negroni, circa 1919 in Florence at Bar Casoni. We pride ourselves on making our Negroni with only the finest ingredients: sacred sweet vermouth blended with Sipsmith gin and Campari.

Happy (belated!) Birthday to Oliver (or Oli, as most of you know him)! 🎂🎉
He enjoyed a well-deserved rest for his actual birthday on Monday, and it was then we realised we don't even have any photos of him in action at work! 📸 (Clearly, he's too busy getting things done!) From welcoming guests with a smile out front to cooking up magic behind the scenes, Oli has been a true powerhouse for the Bailiwick team. He recently made the jump from our front-of-house team straight into the kitchen, and he’s been crushing it ever since.
