BEETBOX is back tomorrow!!

On the menu:

- Beetroot tabbouleh with tomatoes, cucumber and mint

- Mixed leaves with roasted sweet potatoes, aubergine and pomegranate

- Carrotgetti and Courgetti with wild garlic pesto, heritage tomatoes and artichoke

See you from 12! When it's gone, it's gone so come early to avoid disappointment. There will also be delicious Cawston press drinks, dressings and more.

Due to popular demand, it's back. Student run, student loved goodness. Delicious salads (and more!) to get you through exams.

Starting on Friday, the brilliant Eleanor, Lulu and Andie will be bringing Beetbox to the library for an exam time 'Summer Pop-Up'

Come and get some lunch! 5 mins walk from the library and a wonderful celebration of the planet, goodness and more.

In the main hall of St Thomas Aquinas School, just through Quartermile.

- Beetroot falafel pops with a tahini garlic dip

- Courgetti with wild garlic pesto, heritage tomatoes and artichoke hearts

- Beet n root quinoa. Roasted butternut squash, beetroot and red onions with feta and wild rocket

- Kale Caesar Salad

Tomorrow is our last day, and we've got a delicious menu on. £4 offer for juice and a salad!

1) Brown rice salad with aubergine, soy beans, green beans and an Asian dressing

2) Kale Caeser salad

3) Chick peas and Butterbeans with chorizo, red peppers and red onions

So that's it, this first chapter of our Beetbox adventure is done. Thank you so much to everyone who has supported us. To all the salad eaters, veg suppliers, Charlie at Iglu for the kitchen space, Vita Coco, Cawston Press and Goodness Guru.

Leafy greens with leeks, pancetta, walnuts and croutons

There's only 3 days to go. We thought that this sunny Thursday we would treat you to an extra special sunshine deal - £4 for a salad and a sunshine blend juice.

On the menu:

1) rainbow quinoa salad with roasted sweet potatoes, butternut squash and beetroot with sautéed kale.

2) summer new potatoes with lashings of French dressing, asparagus, peas and broad beans.

3) spinach salad with aubergine, courgette and pomegranate seeds and our delicious tahini yogurt dressing
