That funny in-between bit of the year… sunshine’s out, but we’re firmly in the hungry gap, still waiting on the soft fruits of summer to show up.

Luckily, our pal Euan at Pittormie spends the warmer months squirrelling away blackcurrants for exactly this moment.

So for now a blackcurrant swirly bun - sharp and jammy, paired with a soft cream cheese filling and glazed. A little bit Scandi-leaning, and a good reminder that summer’s not far off.

Earlier this week we visited one of our longest standing suppliers, Mungoswells near Aberlady. We’ve been buying flour’s from Angus’ business for over a decade, so we bundled 20 team members on to a mini bus, and packed them off to East Lothian to spend an afternoon with the man himself. Angus is extraordinarily passionate and knowledgable about his craft, and our team benefitted from experiencing this for themselves. Hearing how Angus grows his grains, runs his mill, and why he does what he does.

One the pastry team have been busily working away on for a while and oh it’s good…

Pain Suisse, filled with a hazelnut praline custard made with 55% milk chocolate from Original Beans and Piedmont hazelnuts from Food & Forest. Rich, smooth and deeply toasty.

As far as breakfasts go, this with a little espresso 👌

The bakery and all our shops are open all Easter weekend.
We’ve doubled down on hot cross bun production to keep things well stocked, and extended them right through to Sunday.

As we’ve long been champions of ‘nice things on toast’, for those of you who are going to be in or around the Abbeyhill area this weekend, we have two new seasonal specials on the menu at Easter Road.

The first is Baba Ganoush, Pickled Onion and Courgette on sourdough. We toast the bread, and liberally cover the base with the baba ganoush before layering on courgette ribbons, sliced pickled onion, pomegranate seeds and mint.

The second is a Beetroot and Goat Curd Tartine. Whipped goats curd is spread on to toast, followed by beetroot slices and segments of orange, with a sprinkle of walnuts, peashoots and the obligatory drizzle of Honest Toil olive oil.

‘Nothing in life is free’. Which is broadly true, and yet in the case of wild garlic, entirely false. There are many a woodland walk just out of the city where you will meander through literal fields of wild garlic. The giveaway is of course the smell and it can be a really beautiful experience when you happen across an abundance in a glen or a copse. Worth noting that the leaves are easily mistaken for Daffodils so if you do go out foraging, if it doesn’t smell pungently of garlic, don’t eat it.

Wild Garlic season is very short. March to May and the cut off is quite abrupt, once it’s gone it’s gone for the year. Jura has been out picking Wild Garlic in Dollar Glen and the team have used it to make these Wild Garlic & Cheese Scones, a wonderful savoury treat with a subtle aroma and flavour of the wild garlic balanced by buttery richness.

We’re busy having fun in the bakery with the changing seasons. In product development are Vegan Walnut cookies and Wild Garlic Scones. Whilst we wait we’re still mid Hot Cross Bun season and the last of the rhubarb can be found loitering on top of these Rhubarb & Custard Buns. Available in all the shops, until they sell out.

Sourced from in Yorkshire we’ve spent the past couple of months revelling in the fun that rhubarb brings. Currently we have Rhubarb and Custard buns in all the shops alongside a rhubarb and vanilla jam - which can be smeared on pretty much anything baked and instantly improve matters by a factor of 10 - and a rhubarb compote which is made to pair with our granola. 

Forced rhubarb ends in the next few weeks and we’ll get no more until 2027, the buns, jams and compote will finish when the rhubarb runs out. If nothing else cheers you up on a day like today, a smorgasbord of rhubarb has a good chance of it.
