After 12 years they make their appearance again in the sky !!! Noctilucent clouds.

Noctilucent clouds are thin, wispy clouds that glow with a blue or silvery hue at night when illuminated by sunlight from below the horizon.
They are the highest clouds in our atmosphere, forming in the layer known as the mesosphere around 80 kilometres (50 miles) above the Earth's surface.
Noctilucent clouds only appear during the summer months, and only at latitudes between about 45 and 80 degrees north or south of the equator

Hello all,

It is a very cold day out so a Sicilian ragu, warm and full of flavour will make the trick.
In the photos there are step by step instructions.
Serve with any pasta of your choice, I used spaghetti.
The whole house was filled with the aromas from the spices of a homemade ragu and it mades us to hungry so eaten it wright a way. Unfortunately we forgot to take a pic of the finished product.
So sorry. Once you serve with the pasta you can garnish with Parmesan or Pangrattata.

If you have never heard of pangrattata. I will make it and post a step by step method also

Home made Sauerkraut,
2,5 kg fresh cabbage
30 g sea salt
2,5 g fennel tops
1 fennel bulb

Shred everything wash and drain. Then add salt and mix well. Crush the ingredients to let the juices come out. Place in a jar and press so the cabbage until it will be under liquid.
Leave to ferment for a minimum to weeks. Open every two days to release CO2. After two weeks taste if the taste is developed place in small jars and store in the fridge. I would personally leave for 2,5 to 3 weeks before I put in the fridge.
If it has mould or black spots then DO NOT USE
