We are so thrilled to have been awarded “Drinks list of the year”
at the Good Food Guide Awards earlier this year.
12 years in, we are delighted to still be receiving recognition for our ongoing efforts. A huge thanks to both teams, our guests, and our suppliers who make this all possible.
Timberyard & Montrose Restaurant both have a stringent sourcing process, focusing on organic ingredients, local breweries, small-batch spirits & minimal-intervention wine.
The vast Timberyard cellar has built up slowly over the past 12 years. We focus on bottles produced with care for the land & grape, whilst showcasing the very best of forgotten regions & grape varieties throughout Europe. At Montrose, the same ethos applies with a good portion of the cellar-list made up of bottles, big & small, that have been slowly ageing in the Timberyard cellar.
We also have a unique approach to the way in which the rest of our drinks offering is put together. Anna Sebelova oversees the non-alcoholic programme for both venues and also crafts beautiful liqueurs & digestifs to be enjoyed alongside the elegant cooking on offer. A full non-alcoholic pairing is available at both Timberyard & Montrose focusing on preservation, fermentation & blending to bring together otherworldly soft drinks with texture, balance & intrigue.
Timberyard focuses on hyper-seasonal produce, making the most of Anna’s preservation & foraging skills. Some highlights include a juice made with wild Scottish apple & Douglas fir; Yorkshire rhubarb & dried flowering currant kombucha and a fig leaf gimlet.
At Montrose, the sourcing is slightly broader, lending a more Mediterranean feel to the drinks on offer. Clementine & jasmine kombucha; bergamot-whisky amaro; and a burnt honey & woodruff rusty nail.
We are incredibly proud to be a part of the local dining scene, and we are thrilled that Edinburgh also picked up the Good Food Guide award for ‘Most Exciting Food Destination’.
