The Origins: A Fusion of Cultures
Believe it or not, the two components of this dish didn't start together.

The Fish: Fried fish was actually introduced to Britain by Spanish and Portuguese Jewish refugees in the 16th century. They coated the fish in flour and fried it to keep it preserved for the Sabbath.

The Chips: While potatoes arrived in the UK in the late 1500s, it wasn't until the 1860s that someone had the brilliant idea to pair fried fish with "chipped" potatoes.

The First Shop: There is a friendly historical debate over who opened the first shop. Some credit Joseph Malin in London (1860), while others point to John Lees in Oldham, Lancashire (1863).

Why Is It So Popular?
The popularity of fish and chips skyrocketed during the Industrial Revolution. It was a quick, hot, and nutritious meal for factory workers. Its status as a "national dish" was truly cemented during the World Wars:
The "Good Companion": During World War I and World War II, fish and chips were among the very few foods never rationed in Britain.

The government believed that keeping the supply of this comfort food steady was vital for maintaining public morale.
