Working with the best ingredients we can source is where it starts! For this wedding it started with a passion for game from the bride and groom. We carefully designed and planned the whole menu around their passion for it! Exmoor Venison produced the most stunning venison for the main course, it was butchered to perfection! We cooked the venison two ways in order to use the cuts of meat on the whole animal, rolled hunches that we cooked low and slow and then pulled, and the saddle (fillet) which was flashed over The Dorset Charcoal Company for a few minutes on either side!
