🥔Happy National Potato Day! 🥔

A couple of weeks ago we moved on from those really early new season potatoes onto a more mature crop.

They’ve had that bit longer in the ground and we’re already noticing the difference when we fry them. They’re starting to get a little more colour and crisp up more on the outside, while still staying lovely and fluffy inside 👌

There’s quite a bit of science behind turning potatoes into chips and as the season goes on and potatoes mature, things like dry matter and natural sugars change, which all plays a part in how they fry.

One thing we are noticing this year though is the size.

With all the hot and dry weather we’ve had, they haven’t grown quite to the size we would usually expect. So you might see a few more smaller chips in your portion at the moment.

But what they’re lacking in size they’re definitely making up for in flavour 😍🥔

It’s really amazing how much the weather, rain, soil and even how mature the potato is can change something as simple as a chip.
