It’s the crust.

When a ball of beef hits our screaming-hot griddle and gets pressed flat in one go, the surface caramelises into that lacy, crispy edge you can see in every photo. A thick-formed patty just sits there and steams. Same beef, completely different bite.

We’d tell you what’s in it, but she’s watching. What we can tell you is what it sits on: crispy fried chicken breast, American cheese, lettuce, onion, tomato, and a toasted brioche bun that holds it all together.

We pressed each British beef ball hard onto a screaming-hot griddle. That’s how the crust happens. No smash, no crust.
