Ok...I have just got home from work. Sooo...further to my previous posts... Tina, the lady owner of China Chef on Caterham on the Hill called me earlier. She explained what happened and that it was a total misunderstanding and confusion.

She said that Ruth, the lady who ordered the takeaway from us (but went to her shop instead) had wanted a takeaway from her. Ruth had called us instead thinking she had called China Chef (even though we answer the phone saying Caterham Chinese Restaurant...). I asked if Ruth really did show her our phone number and she said yes Ruth did do that but that she didn't actually look at it properly as it was so busy at the time. She said she just knew it wasn't her number and just assumed Ruth had called China Chef in Guildford as that's apparently what a lot of people do by mistake. That is why Tina told Ruth our number was the shop in Guildford.

I told Tina that I was extremely upset because of what Ruth had told us. What made it worst was that Ruth hung up on us and straight away blocked us, this was what made it the last straw for me! The speed she did it was unreal. Tina said she didn't know that had happened.

I believe Tina was genuinely upset about what had happened. She said she would never steal customers from another business... and listening to her, I believe her. She said what happened to us actually happens all the time to her. People ordering takeaway and not collecting. I said only recently it's been happening more and more to us, we use to get it but very rarely!

We talked for a long time and we both came to an understanding for each other. Business in this trade is extremely hard and stressful (we exchanged awful customer stories). Tina has her customers and we have ours. ...( I actually know a good number of ours actually uses her as well), there is enough business for everyone and she agreed. We ended on good terms.

I will remove the initial post. Tina told me she doesn't use Facebook but was told about my post by a customer who saw it on the Caterham group. I said I didn't post it on any Caterham group. I only ever really post on my own page. She said it had been shared. I told her I would explain to everyone what she has told me .. so here I am...

I will put this behind me now. I don't know Tina at all but she seemed very genuine and seemed like a nice lady. I do believe she meant no malice and just made a mistake thinking we were calling Ruth from Guildford. Let the past be the past now. I wish Tina and China Chef well. Onwards and upwards. x

Thank you all for the kind private and public messages with regards to my previous post, some of you have really made me giggle!

I was very upset when I shared that essay post. I actually couldn't sleep the night before as I was so upset... I know! I need to get a grip!...but I can't help it..it's the type of person I am... I am sensitive! Last night, I slept better as writing the post exorcised me in a way!

Owning a business is a huge worry. The costs to running a restaurant is immense. Every time something like this happens..it hurts! Buuut....please note, it wasn't my intention to start a witch hunt or anything of the sort for Ruth. A fair number of people have asked me for details. Love you all so much and it really touched me that so many want to fight for me! .. but I cannot and will not share any phone details! The takeaway shop involved, what they did to us wasn't great, but I don't want any hate towards them. Please realise, they are not here to defend themselves and we only have the words of Ruth.

To local business owners. Caterham is big. The population is I assume around 10 000 in the valley just by itself. The hill, I assume would have even more as it's more residential.

As a family, we have lived here for over 4 decades. We have seen Caterham change and get bigger and bigger. There is enough business for everyone. Don't forget, we attract people from nearby towns. We do, and we know this as you can see from the number of coffee shops and hair salons and barbers there are. So so many. People moan and say eugh! not another coffee shop, food place, hair place etc etc... yet they all seem to do well! Why? because each business is slightly different.. just like each person. We all have different preferences. Taste is very subjective. I would love to believe we have the best chinese food around. My husband and I really try our best to provide the best for our customers. We don't always succeed.. we're not robots.. but we do try.

Our customers enjoy our food and may not enjoy other places as much...loyal customers of other chinese eateries will believe their regular place provides the best food and they may think ours does not..and that is ok!! ... Taste is very subjective but also more importantly we are all different and that's what's wonderful about the world. When people ask, who's your nearest competition? I honestly never really thought we had competition. Sounds very big headed but I don't see the nearby restaurants and takeaway shops as competition. They do their thing. We do ours. There was once a local eatery who used our name on ubereats and that really was effectively taking customers from us... but that place is no longer in business.

The world is small (6 degrees of seperation and all that..) but Caterham is big and I believe businesses can work happily side by side and support each other. I have on occasion told customers to try the chinese takeaway down the road as we don't deliver. I do not know them. I don't actually know if they even deliver but I do know we don't and we would never have got that customer's business anyway as they needed a delivery and couldn't collect... so why not help that customer and the fellow eatery?

We don't need people to boycott any places for us. If you want a delivery, get a delivery, you want to collect from somewhere else.. it's ok too. We don't want people, who don't want us!!! Hence my previous post.... KNOW WHO WE ARE AND WHERE WE ARE (ooh sorry.. a bit shouty..)!! We don't want to lose customers but we also don't want to make a loss because of a wasted food order. Making this kind of loss is worse than having no customers! To not make money is one thing but to lose money is another.

Oh.. I need to mention about the payment first suggestions. Yessss, we have thought about this before. I mean, I thought about it during covid times!. Taking people's card over the phone isn't completely problem free though. A dodgy customer will always be a dodgy customer.. card payments can be reversed especially when the card payment wasn't taken in person. We as a business would get fined with fees for reversed payments so not only do we lose money, food, we also get fees for the trouble. Not everyone is dodgy but we have had a card payment reversal done to us before and that's not fun.

Our current system of how we work is very old school. People have asked why we don't get with the times and use POS systems. Costs. Costs is why. ..and maybe we should have done this years ago...decades ago.. but we just never changed.. there was always costs of other things which were more important that needed to be made first... now we think.. if we are not able to stay then why invest in such a cost?

I didn't know it was the norm now that many places apparently take payment first over the phone? Those who mentioned this, thank you, you have educated me! The way we run things, it would be very hard to expect my staff to be able to work fast getting the order and passing it to the kitchen if they need to work out the prices and take payment as well. This would slow down our entire work system immensely and i can imagine mistakes of over charging or undercharging could be made easily when placed under such pressure. It is awkward to tell a customer they actually owe more money after they had paid and it would cost us money if we had to issue a refund for overpayments. Each card transaction costs us money and a refund costs us an additional fee on top.

We also have the predicament of a large number of our customer base being of a certain age. They will not want to give details over the phone and those who do, may not be able to give it to us in a quick manner which again will slow down the process. Also, though I trust my current staff explicitly, it only takes 1 (future) staff member who is not trustworthy handling customer details which is then used unlawfully... I don't want the possibility of our good name besmirched in any way!!

That said... never say never...and I guess we just need to really sit down and weigh the pros and cons. As I mentioned in the previous post, people not collecting the food they ordered is sadly becoming more common. I don't know what is the best solution, we will have to mull it over for now about the payment first thing. I just think it's so sad that we have to consider this and that if we do it, then it means that it really is the sign of the times. It would mean there are less and less honourable people which I find deeply depressing.

I better stop now. My husband is telling me to stop writing essays on FB!

Husband just cooked today's batch of crispy lamb and I had to steal some for lunch...I mean for quality control test purposes of course!...

I can confirm it is super delicious!! Such a great batch!! Oh my goodness! The taste from the slow braise was perfection. Melt in the mouth tender meat on the inside and gorgeous crispy skin on the outside. My taste buds are positively dancing with happiness!

Order early to avoid disappointment! x

Just a gentle reminder, we do not open on Sundays...not even Mother's day as it's my day!!!

An apology for last night to those affected. We had an extremely busy night last night and unfortunately service especially for takeaways was slower than usual. We are also aware we had a huge number of missed calls. We had a full restaurant and we had to stop taking takeaway orders after a while to prioritise the orders that we had and to also concentrate on our dining-in customers.

We apologise profusely for not being able to answer the phone and we apologise again, if we had to refuse your order. Trust me, I hate turning down business..we had no choice but to do this last night to quite a few customers, as we had definitely reached our capacity!

Truth be told, this week had been an extremely worrying week for us. We had very little customers during the rest of the week. As restaurateurs, the current climate is extremely stressful. Prices for just about everything just continues to soar with no respite in sight. Nights like last night really helped save the week for us! Thank you, thank you, thank you!

We are extremely grateful for every single customer who walks through our doors. Please do not think we take anyone for granted (a member of staff heard a customer say that we didn't deserve their business!) and I do know it is frustrating when you have to wait a long time for your food but we are honestly working so hard in the kitchen.

The chinese restaurant trade is extremely hard to run. We have a huge number of dishes to our menu compared to the majority of other cuisines. The number of dishes we cooked last night was record breaking. The weight of my wok couldn't have felt anymore heavy than it did last night... but saying that, it was a weight I was happy to bear. We really needed the business.

In the kitchen, it is just my husband and myself doing all the cooking (we do not have a team.of chefs!). We have the occasional help from my father whenever he is available. My father couldn't help last night and my mother stepped in, knowing how difficult it was for us when we are busy. My mother hasn't really worked in a restaurant kitchen properly in over 12 years now so wasn't as fast as she use to be (she was a total machine in her days). She was working so hard last night. To say we were so grateful to this wonderful woman is an understatement. I am thankful for all the family help we receive, as without them, life would be so much harder.

This business is hard. The pressure to "get it right" is so intense. One wrong move and you fear loss of customers and my parents know this. I can't not mention my wonderful staff. They worked so so hard last night. Without good staff, a restaurant business like ours would be infinitely much more difficult to run. We are very blessed to have such wonderful staff.

I have said it already, but I want to reiterate how thankful we are to everyone who walks through our doors. Thank you for everyone's patience last night. We do not know what the future holds for us, but as long as we are here, we promise to continue to do our best for you. We do not always get it right but we do honestly try so hard.

Wow... I don't half waffle on! I was only meant to say we are closed today! If you've reached this far.. thank you for reading my rambling!

Dear customers,

As a restaurant we have always taken pride in the quality of our food and its fresh ingredients. We make a huge majority of things ourselves in-house. Things like pancakes for the duck, we do buy in (life is just too short!).

We are very happy and proud of how our food is produced. All made with love and care. The only thing I have personally had a slight issue with is the use of food colouring in our sweet and sour sauce, kung po sauce and sweet chilli dip. These are old family recipes. Chinese people love the colour red!

We have decided as it's the start of a new year, we want to change how we make our sauces. We have always only used a tiny amount of food colouring in our food (that's all that's needed as we do not like the illuminous red you get from some restaurants and takeaways!) but we want to eliminate it totally now. Don't worry, the sauce will still taste the same, it will just look different. Instead of it being red, it will be more a caramelised sugar colour. We have tried using natural food colouring such as beetroot but the colour is just not right when cooked (though we are still testing this). We are trialling this out and would love feedback good or bad! Hope you will all continue to love our sauces.

Random acts of kindness...

Last night (Valentine's day), a couple came into our restaurant for a meal. They noticed an older couple at another table. This older couple are long time customers of ours (we have the best customers). Very sweet, very lovely. They have been coming into our restaurant since when my father was the owner and probably when my father was younger than I am now (so basically decades ago!).

The couple told my staff that they would like to pay for the older couple's meal.. but with the caveat of not disclosing to them, who had paid for it (they didn't want any attention).

When the older couple asked for their bill, they were obviously very surprised and thankful that it had been settled. This random act of kindness was really lovely to witness by myself and my staff.

I believe, thankfully there are a lot more kind people in this world of ours than bad people (even though the news often depicts otherwise)... I do think however, a lot of people would still expect some sort of praise or at the very least recognition for their good deed! All kindness is special but what this couple did made this act of kindness extra special.

To do good deeds with no need of any recognition is a truly pure selfless act. I wish this couple a wonderful and fortuitous new year because if anyone deserves it.. it is this couple.

Life is hard, everyone has their own battles be it big or small. So a little kindness can go a long way. To be able to even witness such an amazing act of kindness feels truly great and makes me feel hopeful for the future. It makes me want to strive and continue to be good and kind too.

We hope everyone had a loving and kind Valentine's day! I know we felt the love here at Caterham Chinese Restaurant last night.

As always, we have been incredibly grateful to all our customers. Thank you for all your support in the past year. The previous year was hard. This past year has been a real test, emotionally, physically and mentally.

This is the first year, we have chosen to decorate our christmas tree with multi-coloured lights. I wanted to light it up in memory of loved ones no longer with us and also for loved ones we can't be with at this moment in time. They may not be with us physically but they will always be in our hearts and definitely not forgotten.

Life can get busy and stressful, but do take a moment to cherish your loved ones. We wish you all a very merry christmas and a happy new year. x
