EASY VEGAN BANANA BREAD 🍌

We're kicking off the Veganuary recipes with a delicious banana bread!

Ingredients:
3 ripe bananas, mashed
75ml vegetable oil (or melted coconut oil)
150g caster or light brown sugar
1 tsp vanilla extract
225g plain flour
1 tsp bicarbonate of soda
½ tsp salt
Optional: chopped walnuts for topping

Method:
Heat the oven to 180°C (160°C fan) and line a loaf tin.
Mash the bananas in a bowl until smooth.
Stir in the oil, sugar and vanilla.
Add the flour, bicarbonate of soda and salt, then gently mix until combined.
Pour into the tin. Optional: top with walnuts before placing in oven.
Bake for 45–50 minutes, until a skewer comes out clean.
Leave to cool slightly before slicing.

This month, in addition to our Feel Good: Fuel the Mood campaign, we're also celebrating Veganuary! 🌱

Vegan food isn't just falafel or salad leaves - it can be just as flavourful and creative as your favourite meat dishes.

SPROUTDOWN TO CHRISTMAS (THE AFTERMATH)

Wondering what to do with the leftover sprouts? 🤔 Here's an idea...

Creamy Sprout Pasta 🍝

Ingredients:
150-200g cooked Brussels sprouts (halved or roughly chopped)
200g pasta (spaghetti, rigatoni or tagliatelle work well)
1 tbsp olive oil
1 garlic clove, finely chopped
100ml double cream (or crème fraîche for a lighter option)
40g grated parmesan (plus extra to serve)
½ lemon (juice and zest)
Salt and black pepper, to taste
Optional: a few rashers of crispy bacon or pancetta

Method:
Cook the pasta: Bring a large pot of salted water to the boil and cook the pasta according to packet instructions. Reserve a cup of the pasta water before draining.
Fry the sprouts: While the pasta cooks, heat olive oil in a large frying pan over medium heat. Add the garlic and fry for 30 seconds until fragrant.
Stir in the leftover sprouts (and bacon, if using) and cook for 3–4 minutes until they’re hot and slightly caramelised.
Make it creamy: Pour in the cream and simmer gently for 2–3 minutes. Add the lemon juice, zest and parmesan, stirring until the sauce thickens slightly.
Combine: Add the cooked pasta to the pan and toss everything together. If it looks too thick, loosen with a splash of the reserved pasta water.
Season and serve: Taste and add salt and black pepper as needed. Serve topped with extra parmesan and a little lemon zest.

SPROUTDOWN TO CHRISTMAS

Sprout Toasties 🥪

It's a festive spin on the cheesy, lunchtime classic - and one you may just get the kids on board with!

Ingredients:
6-8 cooked, grated sprouts
1/2 onion, thinly sliced
60g cheddar cheese (sliced or grated)
Butter for spreading
2 slices of your favourite bread
Pepper to taste

Method:
Butter the outside of each slice of bread.
Assemble the sandwich with cheese, onion, sprouts, and pepper.
Pop your sandwich into a toastie machine, or on the grill. Remove once the bread is golden brown and the cheese has melted.
