This is our Lancashire cheddar custard from the à la carte menu — a dish inspired by my friend and former Head Chef, Dave Ashton, who I had the pleasure of working alongside earlier in my career.

Dave is now Executive Head Chef at Hilton’s Podium restaurant in Manchester, and he’s currently nominated for Most Loved Chef in the awards.

While Rawkies Kitchen is very much its own thing, a lot of what’s shaped me as a chef came from watching Dave work and following his journey over the years. If you’ve enjoyed our food or just want to do me a personal favour, I’d really appreciate you taking a moment to nominate him.

We’re starting to wind things down at Rawkies Kitchen as we focus on new roles and projects outside of the restaurant. We’ve listed some key dates and info in the post – including our final Friday and a couple of Sunday lunch dates we’re still open for.

📣 We’re closing the restaurant later this year — but we’re not disappearing.

It’s been a tough decision, but we’re incredibly proud of what we built, and so grateful to everyone who supported us. We’re open until the end of September — with our tasting menu, à la carte and full service still running until then.

After September, we’re going back to where it all began… 🍪
