I sometimes add juice for some sweetness and fluid, a squeeze of lime or lemon to zest it up. Sometimes a splash of lemonade - love the fizz on the tongue.

I’m thrilled to be part of this year’s Stowmarket Food & Drink Festival!

I’ve been invited by Taller Books to feature my cookbook and celebrate the flavours of Asia.

If you’re planning a visit and have questions on Asian cooking, pop by and have a chat! I’ll be sharing tips, answering questions, and doing some book signing. You’ll find me at Pitch 82.

I’m also looking forward to wandering the festival myself — trying some of the food stalls, enjoying the live music, and having a drink (or two) with my husband. The Food Museum is also running its Festival of Beer & Brewing, and I’ve heard great things about it.

Chicken & Wood Ear Mushroom Salad.

The wood ear mushroom is so lovely and crunchy! I love that it’s high in fibre (so its good for my gut), and packed with antioxidants. In Traditional Chinese Medicine, it’s believed to help nourish the blood, support healthy cholesterol levels, and have anti-inflammatory properties!

It has a very mild flavour on its own, which means I can layer on any flavours I like. For this salad, I dressed it with soy sauce, black vinegar, Sichuan crispy chilli, and sesame oil.

If I’m stir-frying these exact ingredients, I’ll use soy sauce, oyster sauce, and Shaoxing wine, then finish with a drizzle of toasted sesame oil right at the end to preserve its delicate, nutty aroma.

It’s delicious, give it a go!

Have you seen Shadow?

She hasn’t made it home yet, and we’re hoping someone has spotted her.

Shadow may be somewhere between Wells Street and Guildhall Street, Bury St Edmunds, as she disappeared after a recent house move.

Please keep an eye out in your gardens, sheds, garages, and under hedges—cats can hide in the smallest places when they’re frightened.
