The sight glass gives us a real time look at how the coffee is developing during roasting.

As the beans absorb heat, they lose moisture, expand in size, and change colour through a series of chemical reactions that create sweetness, acidity, and aroma.

By watching the coffee closely throughout the roast, we can make precise adjustments to heat and airflow to control development and bring out the best characteristics in every batch.

Small changes during roasting can have a huge impact on flavour, which is why every roast gets our full attention.

Now in its third year with us, this coffee celebrates both place and people. Produced by women from eight indigenous Mazateca communities in Oaxaca’s Sierra de Flores Magón, this washed coffee brings together nanolots that reflect the region’s rich biodiversity and deep-rooted traditions.

Cold Brew Tonic has been a staple on the menu at Prince’s Street for years and something we knew we wanted to keep serving at Prince Albert Street too.

The Mont Blanc definitely stirred the specialty coffee scene, but that’s exactly it was created.

As a small roaster, we knew we couldn’t just do the same thing as everyone else. With the specialty coffee scene becoming super competitive, we wanted to push specialty coffee in a direction that felt exciting, creative, and but still rooted in quality coffee first.

Our drinkable desserts are made to be fun and approachable without losing what matters to us most: great coffee. Not gimmicks, just a different take on what specialty coffee can look like.

We know these drinks might divide opinion, but if standing out means being willing to do something different. And honestly?

We think Brighton’s ready for it.

Conner & Siala will be hosting a (hopefully) fun, casual cupping at the roastery on Saturday 29th at 11am.

Taste coffees from us, and probably a few other roasteries, with us. No cupping experience necessary. Maybe learn something. Fun not guaranteed.
