Often when we are at markets we are asked why our prices are so low compared to our rivals and we always say that we keep our over heads down. An excellent product is our focus and the coffee for us is the most important aspect of the business as we concentrate on producing the perfect roast, although our packaging seems somewhat low brow it helps keep the cost down. We chose paper bags as they can be recycled and labelling that uses limited colours to save waste and plastic cartridges. We let our coffee speak for itself and so have built a regular customer base that come back time after time.

WHAT IS WILD COFFEE AND WHY DO WE NEED IT?

As most people are now aware the global coffee trade, the coffee we drink, comes from two species – Arabica (Coffea arabica) and Robusta (Coffea canephora). A third species – Liberica (Coffea liberica) is grown around the world, but is rarely used for coffee drinks.

In fact, there are 122 coffee species on top of that which occur naturally in the wild.

The vast majority of wild coffee grows in the remote forests of Africa and on the island of Madagascar. Beyond Africa, wild coffee is found in other tropical climates, including parts of India, Sri Lanka, and even Australia.

Many of these wild coffees do not taste good to drink, but may contain genes that can be harnessed to help coffee plants survive in the future, amid climate change and emerging diseases that attack coffee trees.

In the longer term, we will need to call on wild species to safeguard the future of the world’s coffee crop, say researchers.

“If it wasn’t for wild species we wouldn’t have as much coffee to drink in the world today,” said Dr Aaron Davis of the Royal Botanic Gardens, Kew.

COLOMBIA – LAS GALERAS (NARINO)

Coffee is grown at altitudes that reach 2,200 metres, some of the highest at which coffee is grown in the world. The high altitude of cultivation allows for a slow, development of the coffee bean, which gives the cup profile of Nariño its unique characteristics.

Producers in this region are overwhelmingly small-holders, who manage their own self-sufficient wet-mills and patios (open or covered) for drying. Every family does their own harvesting – usually with the help of neighbours. After the red and ripe cherries are picked, they are pulped by passing them through a manual pulper at the family farm (usually located close to the main house). The waste from this process will be used later as a natural fertilizer for the coffee trees. Depending on the conditions fermentation can range between 12 up to 48 hours. Some producers will add several layers of wet parchment over the course of a few days, which is thought to add complexity to the fermentation process and final cup profile.

While we are staying indoors at home during the lockdown, we have been doing more baking and we at Bourne Coffee Company have been thinking of some ideas for using your purchases to make more than just an excellent hot drink.

Coffee and walnut cake

For the cake
225g/8oz unsalted butter, softened, plus extra for greasing
225g/8oz caster sugar
4 free-range eggs
50ml/1¾fl oz strong espresso coffee
225g/8oz self-raising flour
75g/2½oz walnuts

For the buttercream topping
125g/4½oz unsalted butter
200g/7oz icing sugar
50ml/2fl oz strong espresso coffee
12 walnut halves, to decorate

Method
Preheat the oven to 180C/350F/Gas 4.
In a mixing bowl, beat the butter and sugar together until very light and pale.
Add the eggs one at a time to the butter and sugar mixture, beating well to completely incorporate each egg before adding the next egg.
Add the espresso to the mixture and stir well.
Add the flour and walnuts and stir well to completely combine.
Spoon the cake mixture into two lined and greased 20cm/8in sandwich cake tins.
Transfer to the oven to bake for 25-30 minutes, or until a skewer inserted into the centre of the cake comes out clean and the cake is golden-brown.

Remove the cakes from the oven and leave to cool on a wire rack.
For the buttercream topping, beat the butter and icing sugar together in a small bowl until pale and light.
Add the espresso and mix well.
Spread the buttercream over the top of each cake, then place one cake on top of the other.
Decorate the top of the cake with the walnut halves and serve in generous slices.

We know winter is coming and you may well ask why promote ice coffee at this time of year, but it is a refreshing drink any time of the year so why not.
We did have a customer ask us at one of our markets about an iced coffee drink and have since been experimenting with several recipes. Yes, it is easy to make and believe this is one of the best.

Iced coffee’s

Ingredients:

Bourne Coffee Company Coffee – 200mls
Ice – 2 or 3 handfuls
Milk – 50ml
Method:

Using Bourne Coffee Company Coffee make a cup of strong black coffee using your filter / cafeteria / espresso machine as normal – allow to stand and go cold.
Put into blender with the milk 50mls and the ice – optional idea, why not add one of Ma Bolton’s syrups.
Then blend until smooth and foamy.
Pour into a chilled glass and serve – the photo looks a mess but have to say it really was deliciously refreshing – the cream is of course optional.

Why not make extra and keep chilled in the fridge ready to pour and drink.
