This week we’re serving our **Homemade Burnt Basque Cheesecake** — the iconic dessert from **San Sebastián, Spain**.

Known in Spanish as **Tarta de Queso**, this famous Basque cheesecake is all about the contrast: a beautifully **caramelised, almost burnt top**, with a rich, creamy and silky-soft centre.
