Thank you Pingle produce for the most amazing few days at the farm, exploring, learning and helping where I could!

This cucumber relish is peppery flavour in a jar, add to any veg to jazz up your plate!

Helping make the chilli sauce was an absolute highlight, experiencing just how much fresh ginger, turmeric, onions and chilli goes into each bottle! Hello yellow hands! 🤣

I learnt…
To perfectly pick a tomato
Thoroughly dig for spuds
Harvest at the right time of day
And jar a garden 😊🌿🧡

Thanks for having me it’s been pure heart joy to spend time with you all x

Pingle veg box collection points in Derbyshire in the last photo!

Don’t forget to add a jar of that cucumber pickle!

Lots of love, Leise 🧡🌿

This week in your Pingle box you might well find these rare little gems…

Cute little Padron Peppers
Luminous yellow Pattipans and
Salty Salsola!

I’ve whipped them all up into a quick caponata with a twist and served it with one of my pure protein pancakes (recipe below), then drenched it all in fresh lemon juice and garnished it all with crispy sautéed sage leaves! Dressed with a side of 3 second Dijon and chilli flake mayo, get in my mouth!!!!!

Pattipans -
Slice your Pattipans into cute, path-of-least-resistance shapes
Cut out the seeds and air fry until looking charred, with or without oil, you choose. I’ve used olive oil today but when dieting I dry fry a lot or use a little coconut oil.

Padron Peppers -
The ultimate and easiest way to cook these is how they do it in Spain, sauté with lots of posh salt and your favourite oil until golden and soft, dress with lemon juice and drink with ce***za fria! I did add fresh sage leaves for the last minute of frying as they are so delicious together and we love crispy!

Salsola -
I blanched most of mine for two minutes and then cooled it quickly under the cold tap so it stayed gorgeous and green, once cooked I chopped off any really tough bits of stem. I sautéed just a few stems in the sage oil still in the pan, as they also go really crispy and are a next level garnish!

Fresh lemon -
Gently stir these elements together with some fresh lemon juice and a few capers for that acidic balance!

Dijon mayo -
Your favourite mayonnaise, Dijon mustard, stir, sprinkle a few chilli flakes, done 😊

Vegan Revs Pure Protein Pancakes -
In your blender add…
3 cups water
2 cups gram flour (chickpea flour)
1 cup that is filled with this stuff from …
3 dessert spoons hulled h**p hearts
2 dessert spoons chia seeds
2 dessert spoons flax seeds
2 dessert spoons Boullion powder
(This should fill 1 cup)
Season with salt and pepper
Blend until smooth, stopping half way to scrape down the insides incase any is stuck!
I added 2 garlic cloves and fresh rosemary

Fry both sides in the smallest amount of oil you can get away with without it sticking and serve 😋

Mangle Wurzle chips from this week’s Pingle Produce box!

…tossed in posh salt and served with an Oatly crème fraiche mixed with fresh chives and borage flowers from the garden, to make a creamy, thick sour cream and chive dip.

Thursdays post after picking up my Pingle box…
“Straight off I’m turning that Mandrake…I mean…Mangel Wurzle…into chips by par boiling and air frying. (Thanks Gus x)

Its leaves I’ll sauté with coconut oil, posh salt, garlic, pepper and nutmeg and eat like wilted spinach!”

Absolutely delicious and crazy nutritious, Search ‘Mangle Wurzle nutrients’.

I’d describe it as buttery and earthy. I’m going to ferment my next one into kraut and see just how pink it goes! The leaves are just like rainbow chard and again, packed with pure essential nutrients x
Veg like this, that we’ll not get in the supermarket, bring different combinations of nutrients and honestly, keep cooking interesting 💕 and pink food takes a great photo 🤣

Pure Protein Pancakes -
The first three photos are my vegan staple, pure protein pancakes, loaded with Pingle’s Kimci (Pingci) and their incredible fermented hot sauce! Courgette ribbons, steamed beans, fresh basil and a lime and tamari dressing. Took minutes!

The pancakes are made from gram flour, flax, chia, h**p, pumpkin and sun flour seeds, whizzed up in a blender with some Boullion and fresh rosemary, these beauties contain all the proteins and amino acids I need and they are seriously cheap to make and very filling due to the high pure protein content.

Where do vegans get their protein? SKOPA! That’s where! 🤣 Skopa Zero Waste Place

All these dry ingredients and the olive oil are from Skopa in Wirksworth and a little goes a very long way when making them…They are not just for vegans…they’re for everyone!

Tuscan Salad -
The latter photos are the first thing I made with my Pingle box when I got home, tomatoes like you only taste in Italy, fresh purple basil, cucumber, variegated leaves with a dash of olive toil from Skopa, c***r vinegar from Pingle and a pinch of rock salt, served with fresh sourdough and tamari toasted tofu leftover from the night before, tossed in Pingle’s fermented chilli sauce, this dish took minutes and was everything we hoped it would be and washed down with a glass of dry white 😊☀️🌺🌿
P.S. The stunning turquoise and fluorescent yellow bowl is also from Skopa!

Thank you Pingle, see you tomorrow at the Feathers for me box!

P.P.S. Homage to Dena Smiles who taught me how to make gram pancakes many years ago, these are my twist on them, cramming as many different proteins in as possible cause I’m lazy 🤣🧡🌺 big love and thanks to you Lady Dee, love Leise ###

Thank you The Eyes Have It Music Festival for a beautiful weekend of local and international bands!

I was a punter with my family, not a caterer this year and well fed by nearly all the food stalls and their epic vegan options!

This is a small but perfectly formed, affordable real ale festival that is not to be missed next year!

It made out weekend to see Derbyshire’s Jack's got a plan absolutely having it on the Sunday! Catch ‘em where you can! We do! We love them! See you on the dance floor!

My highlight was the incredible Robyn Wallis Johnson of Wirksworth, who stole the show Saturday evening, stepping in at the last minute. You’ve never seen me move so fast across a field as when I realised someone was perfectly playing Laura Marling, my number one artist!
And there she was, Robyn, in all her effervescence, with a packed out tent holding their breath as she wove her musical enchantments. She mostly played her own material, a breathtakingly beautiful, heartbreakingly honest and ridiculously fun mix of vocal artistry 🧡 Where is this woman playing next?! Catch her music here, what an album! https://open.spotify.com/album/64x1grsoTz6h20Y4VpCwLe?si=qzZ-9S5URkyTsVm3J9pkng&utm_source=copy-link
