On Friday 12th June, guests are invited to an exceptional evening in The Cocktail Lounge at The Merchant Hotel. The Taittinger Champagne Dinner will feature a beautifully curated six-course menu, expertly paired with six outstanding Champagnes from the House of Taittinger - including the remarkable Champagne Taittinger Comtes de Champagne Grands Crus Blanc de Blancs 2014.

Reared in small numbers by the Moffitt family in Blacklion, County Cavan, Thornhill Farm ducks are an Aylesbury–Pekin crossbreed. Their small-scale farming approach and meticulous attention to detail, combined with careful breed selection, produce a perfectly balanced bird with rich, flavourful duck fat and generously sized breast meat.
