🥄Cauliflower Cheese Soup🥄
•1 large or 2 small cauliflowers, chopped
•1 medium onion, diced
•2 stock cubes, vegetable or chicken
•Salt
•Boiling water, enough to cover
•1 Tablespoon of cream cheese (I use Philadelphia)
•Grated cheese (Parmesan/ mature cheddar)
Add cauliflower, onion, stock and water to a pot and cook on medium heat for about 10-15 minutes until cauliflower if cooked. Add cream cheese and some grated cheese and blend with a stick blender to smooth.
Serve garnished with some grated cheese
Serves 8 as a starter
