KAI loved being at a very snowy, sunny and rainy River Cottage HQ yesterday

Thank you to the wonderfully knowledgeable Gill Meller for his class on 'Wild Cookery' which showcased locally foraged & seasonal ingredients across four different courses. And also to the Head Chef and his brigade who all made me feel very welcome - I look forward to coming back again in the near future to experience more of the Farm!

KAI has been busy over the last few weeks learning from the best in Edinburgh, Bristol and Manchester.

A huge thanks to the day and night baker crew at Twelve Triangles who taught me almost everything there is to know about Sourdough
To Tom Kitchen and his brigade at The Kitchin in Leith who pushed me out of my comfort zone and taught me how to butcher pigs heads
To the boys at Alphabet Brewing Company who are using science to push boundaries in brewing and are producing some very out there flavours! Thank you for sharing your knowledge with me
To the artisan coffee roasters of Bristol for working so hard as a collective to push the quality, seasonality and sustainability of coffee to new levels
And lastly, a thank you in advance to The Honours Restaurant and Martin Wishart for having me as a stage this weekend. I look forward to learning as much from you as I possibly can!
