A week at Baldry’s: sunshine edition 🌞 😍

Currant Slice ✨

Ingredients:
Sweet Pastry
(you can make your own or use shop-bought)

To make your own:
• 300g plain flour
• 150g butter
• 40g caster sugar
• 1 egg yolk
• 50ml water

Filling
• 340g currants
• 40g granulated sugar
• 75g butter
• 50ml milk

Method:

1. Gently melt the butter, sugar, and milk together in a pan until fully combined. Remove from the heat, stir through the currants, and leave to soak while you prepare the pastry.

2. For the pastry, combine all ingredients into a smooth dough. Chill briefly, then roll out to roughly the thickness of a £1 coin.

3. Line your tin with the pastry, leaving a slight overhang around the edges. Fill with the soaked currant mixture, then top with the remaining pastry.

4. Bake at 190ºC for 30 minutes until golden brown.
