A bitter sweet day today as we send our Maxy Moo off on his travels for the foreseeable. As naturally talented as he his hilarious. Max has been an absolute pleasure to nurture and watch absolutely thrive working in our Altrincham kitchen. He won a the biggest poster at Christmas do for good reason but has also won the biggest place in our hearts. We are gonna miss him, and the Altrincham crew are gonna miss him terribly. Max has the work ethic, talent and just the right amount of madness to go incredibly far in this industry. We can’t wait to watch.

Thank you for all your hard work Max, don’t go changin. X###

Luke.

A stoic pose from a stoic guy who has recently just crossed the boarder of 10 years at Tender Cow!

10 years!!! That length of time in any industry at any company is humbling. But to do it in hospitality amidst the chaos that is really takes an extraordinary person, and that he is.

Luke started with us when we were clueless (we still are) nestled amongst family members and novices alike. Fortunately for us Luke was also a novice in the industry so we learnt, adapted, made mistakes and grew together.

His immovable calmness is exactly what both Holl and I needed in the early days as both naive business owners amongst some incredibly busy services.

As we evolved Luke took on more and more and finally, fully took the reins at Alty so we could focus on Mackie Mayor.

I relate the running of a kitchen to moving house on a weekly basis. Constantly packing (prepping) and unpacking (selling said prep) on a weekly basis. It’s relentless, hard work and not for the faint hearted.

There’s no way we could try and summise the work he has got through over the years but to put it into context we chop approximately 300kg of potatoes a week in Alty. That’s 15 tonnes over 10 years. Luke’s probably been behind at least 5!!

Without Luke, his calm manner and unrelenting work ethic Alty would not be what it is today. He is the best example of taking a chance on someone who has absolutley zero experience in this gruelling industry and a massive reason as to why we go for people over experience. Give people a chance and let them surprise you.

We’re lucky enough to have been doing this a few years now. Sides become cyclical as well as seasonal and the teams know which sides to get on the menu before they are even asked. Broccoli has arrived in which is always one of our favourites. Aubergine is on at which is another winner. We love this time of year when the evenings start to draw out a little longer and we get a reminder that winter is almost done. Hope to see you this weekend for some vegetables and some optimism.
