Huge congratulations to Danny Young for placing No. 2 on The Herald ‘The 50 Most Exciting Chefs Working in Scotland in 2026’ list!

Since joining The Torridon in 2024, Danny has gone from strength to strength. From winning National Chef of the Year 2025 to leading the 1887 restaurant to its first Michelin Star and Michelin Green Star in February 2026.

The list was compiled from leading hospitality figures, food and drink writers, and content creators from all across Scotland. It’s an honour for our head chef to be recognised amongst such incredible talent in the Scottish hospitality scene.

From the depths of the Highlands to the summit of Sgurr Mor.

Local langoustine joins chopped chives, homemade mayonnaise flavoured with dill and a touch of caviar, alongside a gel made from lemony yuzu fruit, all assembled on a brioche roll baked in-house.
