Avant qu'un café arrive chez vous, il passe par là.
Le cupping — c'est notre façon de goûter, d'évaluer, de décider. Pas seulement pour les nouveautés, mais aussi pour le quality control !
Plusieurs torréfactions du même café, infusées de la même façon. On cherche la régularité, les arômes, l'acidité, le corps, la longueur en bouche.
Si quelque chose ne va pas — trop amer, manque de clarté, un défaut qu'on n'aime pas — il ne part pas. Simple.
Ce lot, c'est un Colombie BIO de la région de Huila. Altitude 1 750 m. Récolte 2024. Traitement lavé.
Ce qu'on a trouvé : caramel, noisette grillée, une acidité agrume très douce. Propre, équilibré, agréable le matin sans sucre.

Notre Colombie UCUMARI touche à sa fin — et cette fois, il n'y aura pas de réassort.
Cauca, Colombie. Café lavé. Torréfaction mi-légère.
Notes d'amande douce, une touche de pamplemousse, une finale nette qui sait partir à temps.
Ce café vient de la FCC — 358 familles de petits producteurs qui cultivent un terroir volcanique d'exception dans l'une des régions les plus complexes de Colombie, entre pressions des monocultures, tensions foncières et quête de résilience. Le genre de café dont on peut vraiment retracer chaque étape.
Transporté à travers l'Atlantique par voilier — zéro émission en mer — et torréfié à la main ici, en Lot-et-Garonne.

This one comes from the FCC — 358 smallholder farming families working volcanic terroir in one of Colombia's most complex regions, balancing the pressure of monocultures and land conflict while producing some of the cleanest cups we've ever roasted.
Transported across the Atlantic by sailboat — zero emissions at sea — and roasted by hand here in Lot-et-Garonne.

And particularly ethics in coffee should, in my opinion, take centre stage in the majority of our decisions.

When so many people are involved along the supply chain to produce such a widely consumed commodity, the question should maybe be less about who benefits the most, and more about does everyone benefit ´correctly’.

Those coffee beans took a long trip to get to you…and a huge driving factor for us here at has been ensuring that the hands at origin are well remunerated for their exhaustive work.

There’s a lot of grey area and room for debate but specialty coffee addresses so many of these concerns with its higher premiums paid and better traceability.

Taking care of how and what we consume does not only benefit us, but those who came before us.

Pro tip: Observe what your freshly ground espresso looks like…when dialing in your espresso and adjusting the grind (the first step)

We can look for clues to what the coffee looks like straight out of the grinder.

Less coffee dosed and lots of clumps (a few clumps aren’t the end of the world) ; we can expect a grind far too fine. Adjust coarser. (Photo 1)

Too much coffee dosed and sandy aspect; grind too coarse. Adjust finer (photo 2)

Sometimes little hacks like this serve as clues to shortcut a few steps and gain a little time on the back end.

Sometimes bringing together a blend is so much easier thanks to the amazing work done at origin.

Our Fleur de Café was originally inspired by the flowery and bright feeling of spring and has been a mainstay in our offer list for some time thanks to the ongoing demand.

A blend of washed Colombians and Ethiopians we find peach notes, caramel and a lingering dark chocolate. Nicely balanced and bright.
