Vit hava tann stóra heiður at bjóða Martin Öfner, høvuðskokki á trýstjørnaðu Michelin-matstovuni Zén hjá Björn Frantzén í Singapore, til eitt serligt “Four Hands Dinner-kvøld” 11. apríl saman við okkara egna køkstoymi 🍽️✨

Martin Öfner er uppvaksin í eysturríksku Alpunum 🏔️ og hevur arbeitt á nøkrum av mest viðurkendu matstovunum í Evropa, millum annað Geranium í Keypmannahavn og De Librije í Hollandi.

Saman við Sebastian Jiménez og toyminum á Ræst fer hann hetta kvøldið at skapa eina serstaka smakkmatskrá 👨‍🍳🔥

Hetta verður eitt heilt serligt kvøld, og vit gleða okkum ómetaliga nógv at bjóða gestum til okkara fyrsta “Four Hands Dinner” í ár.

Tonight in Malmö, Falstaff unveiled their new ranking of Nordic restaurants, and we’re super happy that we’ve been awarded 4 Falstaff ‘forks’ and 95/100 points, ranking alongside our friends from Bornholm and other fantastic colleagues that we admire.

Thanks to .nordics and for this recognition, and not least, thanks to everyone on our fantastic team for pushing every day!

Sunday was extraordinary for our little restaurant. At the Danish Food Critics’ ‘Dish of the Year’ competition in Copenhagen, .cocina8 competed and took home the trophy in the ‘Sea’ category for his serving of taco with Faroese langoustine, brain salsa, and pípian rojo! 🦞🌶️

And to top things off, restaurant manager and sommelier won the special award for outstanding wine and beverage handling! 🍷🍇

Competing against some of the world’s best restaurants, we are immensely proud to have taken home these awards to Ræst and the Faroe Islands. 🇫🇴

Thanks to the Danish food critics, all of our wonderful colleagues, and everyone else involved in this great event. 💪

DRY-AGED MACKEREL ⁠
One of our favourites from last year’s menu, our North Atlantic mackerel is dry-aged to firm up the texture and dry out the skin. We then grill it outside, crisping up that delicious mackerel skin, and serve it with a fermented gooseberry pipián sauce, roasted sugar kelp oil, preserved Faroese crowberries, and a spoonful of steel-gray and deliciously nutty Oscietra caviar from . ⁠

Should we keep this on the 2026 menu? ⁠

By the way…did we mention that, besides awarding a beautiful recognition the other night, also ranked Ræst as Denmark’s 6TH BEST RESTAURANT!? ♥️🥳

We are truly humbled to be standing shoulder to shoulder with some of the most talented people in our industry, and we’d like to sincerely thank White Guide for this recognition. Not least, a warm congratulations to all of our wonderful friends and colleagues. We hope to see you all in the Faroe Islands in 2026! 🇫🇴✌️

Last night at the gala, our very own took home the ‘Jan Restorff Award’.

We are humbled and grateful, and also a bit sad today. Jan was a friend and a great mentor, and will forever live in our hearts. Karin will strive to live up to this award and keep Jan’s legacy alive.

We are beyond excited to announce that Ræst has been nominated by as Denmark’s Best Restaurant 2025! Furthermore, restaurant manager has been nominated for this year’s ‘Restorff’ - the special service award in honour of beloved service icon Jan Restorff, who sadly passed away this year. This recognition means the world to us ♥️

Karin is in Copenhagen for the award gala tonight, and we can’t wait for the results. Please wish her good luck 🍀

Happy Friday! We are very happy to announce that the Association of Danish Food Critics has nominated Ræst for the ‘Dish of the Year’ competition for the second year in a row! ⁠

Throughout the year, the food critics nominate dishes in three different categories, and this year, Ræst is nominated in two out of three categories. ⁠

In the LAND category, we are nominated for our lamb’s heart dish with ræst lamb bones demi-glace and chimichurri. ⁠

In the OCEAN category, we are nominated for our Faroese taco with langoustine, fermented carrots, and langoustine brain salsa. ⁠

On 1st of February 2026, .cocina8 will cook the dishes at the ‘Dish of the Year’ competition in Copenhagen along with the best restaurants in Denmark. ⁠

To top things off, our restaurant manager and head sommelier is also nominated for the food critics’ special ‘SERVICE’ award, recognising excellence in service and hospitality. ⁠

We couldn’t be more proud. Thank you to the Danish food critics for the recognition. ⁠
