The first dish of the tasting menu in the making - mattak.
The whale skin is folded around diced whale blubber, brushed with an oil made from Faroese Flower Currant leaves. What binds the cubes and layers together is a glaze from the cartilage which is a thin layer between the blubber and whale skin.

Some thoughts from Head Chef Poul Andrias Ziska:
As we prepare to start our final season in Greenland, I wanted to share some reflections with you all. Today, we learned that Restaurant KOKS is no longer included in the Michelin guide. This is undoubtedly difficult news, but I am immensely proud of our journey and the exceptional work we’ve done together. Since 2019, we’ve held two Michelin stars, a testament to our dedication and passion.
With our upcoming closure, it’s fitting that the guide would not include a restaurant nearing its end. However, this does not lessen the pride I feel for what we’ve achieved. As we embark on this final chapter, we will turn our disappointment into determination and make this season extraordinary.
A heartfelt congratulations to all the new Michelin stars and the restaurants that have kept their stars. Your achievements inspire us all.
Thank you to my incredible team and to all our guests who have been part of this journey. We will celebrate our achievements and make our final season one to remember.

KOKS is closing after the summer season in Greenland and pop-up in Tivoli in Copenhagen

After careful consideration we must share some bittersweet news. KOKS will close its doors temporarily.
Despite our best efforts to secure a new location in the Faroe Islands, we have not been able to secure a permanent location before 2026 at the earliest.

Our final season will be held in Ilimanaq, Greenland, from June 12th to September 7th. Following this, we are excited to announce a special pop-up event in Tivoli, Copenhagen, from October 10th to November 3rd this year.

KOKS has garnered international acclaim for its unique Nordic Cuisine, highlighting local ingredients and traditional Faroese flavours. Our dedication to excellence and innovation has earned us two Michelin stars and a dedicated following of gastronomes worldwide. We are immensely grateful to our staff and partners for their unwavering support throughout this entire journey.

We have explored numerous possibilities in the Faroe Islands, but unfortunately, none have materialised as suitable options.
However, we remain committed to reopening in the Faroe Islands once we find the perfect location to continue our culinary journey.

With gratitude and humility, I want to thank the amazing staff at KOKS, led by head chef Poul Andrias Ziska, who has created moments of culinary joy with elegance and courage, and head sommelier Karin Visth, who “ran the show” with dedication and hard work.

Agnes joined KOKS as an intern in 2021 and now serves as Sous Chef on her fourth year with the team.
The move from the Faroe Islands to Greenland altered her approach, focusing on strategic menu planning within a three-month window before the season starts in June in Ilimanaq. Agnes states, that “important elements such as fermentations and condiments require time to develop flavor”.
As Sous Chef, she manages production plans and collaborates with a small team. Agnes looks forward to the 2024 season in Ilimanaq, where she finds joy in showcasing a 20 course tasting menu in Greenland’s peaceful landscape. She appreciates the balance between Michelin restaurant and the calm and breathtaking nature surrounding her 🤍
