hi everyone, we have some fun news

first: summer season bookings are now open. we start july 1st and run through the end of august (someone’s turning one soon, by the way)

second: we’re closing for the next three weeks. resting, traveling, exploring, getting as much sun as possible, swimming and of course finding inspiration for the new menu (update coming soon)

as we move into a new chapter, we are looking for two members to join our team

sommelier with fine dining background, deep knowledge of wine

cdp (chef de partie) with experience in serious, ambitious kitchens

positions available from july 1st 2026

applicants must be eligible to work in the eu, with english as our working language

I have some exciting news for you

I still can’t believe it, but we got our very first Michelin star

yesterday, the whole boreal team flew to Copenhagen to attend the ceremony and find out who would receive stars this year
when they called boreal, we couldn’t believe it

less than a year of work, constant changes, daily improvements, more changes, 5 menu updates in 7 months, and ambitious plans ahead and ahead

as I said on stage yesterday: every time I come to Copenhagen, I feel enormous stress. my first day at Noma, MAD Symposium, and now Michelin. but every single time I leave Copenhagen, I go back stronger. full of something I didn’t have before. I think we all need a Copenhagen in our lives. a place that scares you. a place that forces you out.

thank you, team. you are the most talented team I’ve ever worked with!

thank you, our guests. this is all for you!
