“Octopus cooking is a relationship test.
One second it’s minding its business in the ocean… the next it’s in my pan fighting for its last degree of tenderness.

The moment that octopus hits the hot pan, everybody becomes a marine biologist.
‘Chef, is it supposed to curl like that?’

Yes.
It knows rent is due.

Then comes the flambé — fire shoots up, eyebrows disappear, and suddenly the neighbors think we’re summoning ancestral seafood spirits from the Indian Ocean.

But after the smoke clears…
that beautiful coastal sear, garlic, butter, spice and flame come together like a Swahili love story.
