Sui by Yusuke Matsush*ta. so cool... #3
How can the freshness of a Kyoto summer be transformed into a frozen dessert?
Yusuke Matsush*ta draws inspiration from nouryou, the custom of seeking relief from the summer heat by the water, to create Sui. Its shape, which at first glance resembles a flower, actually evokes the movement of water from a fountain, flowing outwards in all directions.
The dessert also reinterprets the Japanese tradition of kakigori through matcha, anko and warabi mochi, incorporating them using French pastry techniques. And it does so with a distinctive twist: it contains no ice cream, but rather a frozen annin mousse that retains a melt-in-the-mouth texture and is served at -6°C.
