Since ancient times, people have known that certain plants possess mysterious special properties in terms of nutrition and natural remedies. Many thousands of years ago, our ancestors began to learn that certain herbs could seemingly affect miraculous recoveries from disease and injuries and herbalists attained the status of magicians as they handed out remedies and potions for almost anything from cramp and rheumatism to banishing nightmares and even how to attract a new lover. It’s clear that Mediterranean herbs have played an important part of people’s culture and wellbeing for thousands of years. Records date back to 2800BC when the ancient Egyptians used herbs for dyes, perfumes and food.

In our kitchen at the restaurant, we believe that bland food can easily be livened up with the addition of a few herbs and they can also help to enhance and bring out the natural flavours of food in a similar way to salt. We also like to focus on lesser-known, sometimes forgotten herbs and as a result our menu is scattered with references to sweet cicely and bergamot, woodruff and hyssop, yarrow etc.

Desde tiempos ancestrales, las personas han sabido que ciertas plantas poseen propiedades extraordinarias, tanto desde el punto de vista nutricional como por sus beneficios naturales para la salud. Hace miles de años, nuestros antepasados descubrieron que algunas hierbas parecían favorecer recuperaciones casi milagrosas de enfermedades y lesiones. Los herbolarios llegaron a ser considerados auténticos magos, ofreciendo remedios y pócimas para aliviar desde calambres y reumatismo hasta ahuyentar las pesadillas o incluso atraer a un nuevo amor.

Está claro que las hierbas mediterráneas han desempeñado un papel fundamental en la cultura y el bienestar de las personas durante milenios. Existen registros que se remontan al año 2800 a. C., cuando los antiguos egipcios ya utilizaban las hierbas para elaborar tintes, perfumes y alimentos.

En la cocina de nuestro restaurante creemos que incluso el plato más sencillo puede transformarse con la incorporación de unas pocas hierbas aromáticas. Además de aportar frescura y personalidad, ayudan a realzar y potenciar los sabores naturales de los alimentos, de una forma similar a la sal. También nos gusta dar protagonismo a hierbas menos conocidas, y en ocasiones olvidadas. Por ello, en nuestra carta encontrará referencias a la perifollo dulce (sweet cicely), la bergamota, la asperilla olorosa (woodruff), el hisopo, la milenrama y muchas más.

Wild sea bass “Tsukudani” with broccoli puree, lapsang souchong, ginger-citrus fruit beurre blanc
Our local sea bass is marinated in “tsukudani” , a Japanese mixture of kombu seaweed, sake, mirin and dashi which adds, flavour, texture and a hint of umami. It showcases our passion to add something different to our seafood preparation.
We sreve our sea bass with a broccoli puree, lapsang souchong to add a touch of smokiness
& finish with a citrus fruit-ginger beurre blanc.

Lubina salvaje “tsukudani”, puré de brócoli, lapsang souchong y beurre blanc de cítricos y jengibre
Lubina salvaje, se marina en tsukudani, una mezcla japonesa de alga kombu, sake, mirin y dashi que aporta sabor, textura y un delicado toque de umami. Esta preparación refleja nuestra pasión por ofrecer una interpretación diferente de los productos del mar.
Servimos la lubina con un puré de brócoli, un toque de lapsang souchong para aportar un sutil aroma ahumado, y la terminamos con una salsa beurre blanc de cítricos y jengibre.

Cremoso de ruibarbo y chocolate blanco con fresitas de Mallorca, hierba Luisa y helado de polen de hinojo

Este postre reúne la vibrante acidez del ruibarbo con la dulzura natural de las fresas de Mallorca recolectadas en el momento óptimo de la temporada.

Lo terminamos con un helado de polen de hinojo, que evoca los paisajes silvestres del campo balear.
