Selbstverständlich berufen wir uns auf unsere Wurzeln und wagen viele Gerichte aus alten Zeiten in neuer Zubereitung. Dazu gehört eine sehr genaue Grundlagenforschung die bis in die Haushalte unserer Angestellten und auch von Gästen geht. Auch hier in Ägypten gelten die Gerichte von Mutter und Großmutter als die absolute Wahrheit. Da diese Wahrheit sehr subjektiv ist, versuchen wir ein Stück von Großmutters Kochkunst in die heutige Zeit zu retten.
