من المعروف عن البيتزا الإيطالية الكلاسيكية أنها رقيقة، عكس البيتزا الأمريكية ذات العجينة السميكة.
وبالنسبة للمكونات و الصلصات، تصنع صلصة البيتزا الإيطالية من مكونات بسيطة ولكن طازجة حصراً، مثل الطماطم وزيت الزيتون الطازج والأوريجانو والثوم، على عكس البيتزا الأمريكية التي يستخدمون فيها الطماطم المعلبة.
بالإضافة إلى أن مكونات البيتزا الأمريكي كثيرة مما يعطيها كثافةً وإشباعاً أكثر من الإيطالية ذات المكونات القليلة والبسيطة.
فلا ترى البيتزا الإيطالية مشبعة باللحم والجبن فهم يضعون في الاعتبار أن تكون خفيفة على المعدة وسهلة الهضم وبسيطة بمكونات لذيذة.

الفيديو ده بيبين البنية الأساسية لفرن الحطب اللي بيستخدم في طهي البيتزا الإيطالية واللي حرارته الداخلية بتوصل ل٤٠٠ درجة مئوية علشان عجينة البيتزا تبقى هشة و طرية و بيستخدم اسلوب الانعكاس الحراري الناتج عن إشتعال الحطب داخل الفرن و عكس سقف الفرن المستدير للحرارة في جميع الإتجاهات.
