Working sustainably with only Danish and seasonal ingredients is not always the easiest way to run a kitchen - which is exactly why our chefs deserve a little extra credit.
A lot of creativity goes into making sure as much of every ingredient as possible is used, instead of wasted. Right now, that means turning fish heads and bones into something worth serving on the plate.
The heads and bones are slowly cooked for four hours with cold pressed, Danish rapeseed oil and onions, before being strained and blended into a rich emulsion. The result is served alongside some of our fish, adding depth, texture and flavour while making use of parts that too often go to waste.
