As the days grow longer we welcome spring with a new Mandoo. Our dumpling is filled with po***ck and cured pork fat, topped with raw shrimps from the northern Danish coast, preserved wild roses, fingerlime, crispy Korean red chilies, kombu slow-cooked in soy, the very first rhubarb of the season and fresh basil. ⠀

This winter interpretation centers on the acorn in its purest form. A delicate, thin tartlet shell made from acorn flour provides a crisp foundation, paired with a silky, traditional-style acorn jelly crafted from acorn starch and lightly seasoned with sesame oil.⠀

The tartlet is layered with a vibrant paste of pickled chanterelles and a second paste of fermented green strawberries infused with green chilies. It’s topped with fried seaweed and chestnuts.⠀

Our team have been on a long journey for close to three years and we would like to send a special thank you to some of the people who made possible by opening their home to us. ⠀
