Made from raw cow’s milk and shaped by time rather than speed, it reflects a way of producing food that values identity, patience and place.
As part of the LoST Cheese project (Looking for the Sustainability of Taste in Europe), Provolone del Monaco represents a broader commitment to protecting small-scale productions where sustainability, biodiversity and cultural heritage are inseparable from flavour.
