With Ethiopian and Eritrean style roasting, usually the beans are cooked to a dark roast.

Once the second layer peels off and the beans start to glisten with natural oil, the coffee is ready and is then poured into a hand woven mat made of reeds called a Meshrefet, to cool off naturally.

Each roast is unique, yet equally as complex.
