Try it with fermented soybeans such as Thua Nao ถั่วเน่า, traditional soybean disks widely used by Tai Lue, Shan and Northern Thai communities in place of shrimp paste. They bring a rich salty, umami kick to curries, soups and chili dips alike.

DID U KNOW:
Pad Kra Pao emerged during the 20th century as part of Thailand’s rapid urban street-food culture, especially in central Thailand and Bangkok.
The name literally means:
ผัด (phat/pad) = stir-fried
กะเพรา (kaphrao/kra pao) = holy basil
It’s meat, garlic, chilies, holy basil, fish sauce, oyster sauce, a little sugar — fast, fiery, salty, fragrant, slightly sweet, ultimately comforting. Usually served over rice with a crispy fried egg that ideally deserves co-star billing. We‘ll keep the jok runnyyy and the egg white crispyyy 🍳
